Ginger Garlic Green Beans

Ingredients:

  • 1 pound green beans, trimmed
  • 3 garlic cloves
  • 1 tablespoon soy sauce
  • 1 tablespoon grated peeled ginger
  • 2 teaspoons rice vinegar (not seasoned)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon Asian sesame oil
  • 1 1/2 teaspoon sesame seeds, toasted

Directions:

  • Cook beans in a 6-quart pot of boiling well-salted water, uncovered, until just tender, 6 to 7 minutes. Drain in a colander, then plunge into an ice bath to stop cooking. Drain beans and pat dry.
  • While beans cook, mince and mash garlic to a paste with a pinch of salt, then stir together with soy sauce, ginger, vinegar, and oils in a large bowl.
  • Add beans and toss. Serve sprinkled with sesame seeds.

This was a great side dish which we paired with an easy garlic chicken dish. The ginger-garlic sauce came out perfect and the beans were amazingly flavorful without overdoing it with the garlic. Would make this dish again for sure!

Easy Garlic Chicken

Ingredients:

  • 3 tablespoons butter
  • 4 skinless, boneless chicken breast halves
  • 2 teaspoons garlic powder
  • 1 teaspoon seasoning salt
  • 1 teaspoon onion powder

Directions:

  • Melt butter in a large skillet over medium high heat. Add chicken and sprinkle with garlic powder, seasoning salt and onion powder. Saute about 10 to 15 minutes on each side, or until chicken is cooked through and juices run clear.

This was a great quick and easy dish with great flavor. We paired it with some ginger garlic green beans. This dish left me wanting about 12 more.

Would make these gain for sure.

Ingredients:

  • 1/2 cup mayonnaise
  • 1/4 cup blue cheese dressing
  • 8 slices multigrain bread
  • 2 cooked chicken breasts, sliced
  • 1 ripe avocado, sliced
  • 8 slices cooked bacon
  • 2 hard boiled eggs, chopped
  • 4 lettuce leaves

Directions:

  • Prepare the sandwich spread by mixing together the mayonnaise and blue cheese dressing. Spread 2 tablespoons on one side of each slice of bread. Top 4 of the prepared pieces of bread with 1/4 each of the chicken, avocado, bacon, hard boiled eggs, and lettuce. Top each sandwich with another slice of bread and serve with the remaining blue cheese spread on the side.

I wasn’t sure how much I would like a sandwich based on a salad, but I loved this sandwich. It really is more of a chicken sandwich with great toppings than a salad sandwich with some chicken in it. A great blend of flavors and everything is better with bacon. Would make this again for sure!

Ingredients:

  • 2 1/4 cups thinly sliced carrots
  • 1/2 cup water
  • 1 tablespoon snipped fresh or dried chives
  • 1 tablespoon brown sugar
  • 1 teaspoon chicken bouillon granules
  • 1/2 teaspoon snipped fresh rosemary or pinch dried rosemary, crushed
  • 1/8 teaspoon pepper

Directions:

  • Place carrots and water in a saucepan; cover and cook over medium heat for 8-9 minutes or until crisp-tender. Drain, reserving 2 tablespoons cooking liquid. Transfer carrots to a serving bowl and keep warm.
  • In the same pan, combine chives, brown sugar, bouillon, rosemary, pepper and reserved cooking liquid. Bring to a boil; stir until bouillon is dissolved. Pour over the carrots and toss to coat.

These carrots were great. We paired them with our cobb salad sandwiches. The carrots came off very flavorfull and are an amazing alternative to those steam bags from the freezer section.

Would make this again for sure!

Ingredients:

  • 1/2 cup butter
  • 1/2 cup shortening
  • 1/2 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup white sugar for decoration

Directions:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a large bowl, cream together butter, shortening, brown sugar, and 1/2 cup white sugar until smooth. Beat in the egg, and stir in the vanilla. Combine the flour, cream of tartar, baking soda, and salt; beat into the creamed mixture.
  • Roll dough into 1 inch balls. Dip the top half of the balls into water, then into remaining white sugar. Place sugar side up onto ungreased cookie sheets. Flatten slightly.
  • Bake for 8 to 10 minutes in preheated oven, or until light brown. Cool on wire racks, and store in an airtight container.

These cookies were pretty good. Something simple with not alot of things tossed in. Great for a time when you are chocolate chipped out. They came out light and fluffy. Would Make These Again For Sure!

Italian Grilled Cheese Sandwiches

Ingredients:

  • 1/4 cup unsalted butter
  • 1/8 teaspoon garlic powder (optional)
  • 12 slices white bread
  • 1 teaspoon dried oregano
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 (24 ounce) jar vodka marinara sauce

Directions:

  • Preheat your oven’s broiler.
  • Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.
  • Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.
  • Cut sandwiches in half diagonally, and serve immediately with vodka sauce on the side for dipping.

These sandwiches were good, but not great. The falvors were good, but they were only a little more than grilled cheese with dipping sauce.They were very quick and easy to make so they would make a great quick lunch or even a snack. Perhaps even a good way to introduce that grilled cheese kid to more flavors. May make these again.
